Fine French Feast + Apples For Fall 🍷

As a passionate wine drinker and hopeful wine expert, France has always been one of my culinary locations of choice. Why? Because, not only is France known for it’s incredible bordeaux blends, the country is home to a tasty french feast selection of warm baguettes, sharp cheese, decadent chocolates, and sweet pastries.

Obviously, an incredible selection of all of my favorite things. Not familiar with french dining? In this blog I am sharing a few of my favorite pairings and recipes for a fall feast that is inspired by a collection of french culinary creations.

Course 1: Cheese & Wine Pairing

Hosting friends & family? If your family is anything like mine then you will need a case of wine, a few pounds of delicious cheese, olives, fresh sliced apples from the orchard and crackers. The cheese plate can be perfected in a number of different ways and can be enhanced with some thinly sliced meats or jams as well.

After having a family gathering, my grandpa was out searching for this cheese within 24 hours. He loved it and so did I! He ended up finding it at our local Whole Foods Market where they said it is a best-seller. The Istara P’Tit Basque cheese is made with sheep’s milk and has a very smooth texture.

Paired with the distinct cheese flavor, I poured a round of Château Bonnet Rouge 2012 (a mix of Cabernet Sauvignon & Merlot) and Château Bonnet Blanc 2015. These went together perfectly! Most importantly, don’t forget the baguette and butter. The Presidente Unsalted French Butter is perfect for cooking, baking and spreading on your slice of bread.

To pick up on the fall theme, I set the table with these adorable fall leaf glasses and a handful of silver pumpkins.

Course 2: Grilled Tuna, Roasted Vegetables & French Onion Sauce

The French certainly know how to make a tasty dish, but the portions are a lot smaller than I am used to! Instead of creating a series of small bites for an entree, I have put together a delicious Bluefin Tuna recipe using a healthy steak portion of 4oz. and all the fixings.

I can’t express how wonderful it is to live somewhere that seafood is readily available and fresh. Paul goes fishing and always comes back with these incredible tuna steaks for us to enjoy (he’s also quite the chef). These steaks only need to be seared lightly on both sides and paired with simple ingredients + a full glass of white wine (like this one by Les Vignobles Andre Lurton) to be satisfying.

This dish was not an easy one to pull fall flavors into. The way I ultimately found a solution was to pair the tuna steaks with a homemade French Onion Sauce and seasoned vegetables. It tastes very much like a hearty fall meal. Believe me, it’s one to save in your recipe books!

Course 3: Apple Coffee Cake with Valrhona Chocolate Drizzle

Every time I go apple picking I find myself with heaps of extra apples. I’m always searching for new recipes, besides your traditional apple pie, to play around with. The variety of apples makes every dish unique; even when you use the same recipe more than once.

Coffee Cake is one of my favorite treats for breakfast, dessert, and every meal between. This recipe was created with my freshly picked apples and delicious Valrhona chocolate in mind. The chocolate I used was on the lighter side from their collection; it’s also one of their newest flavors.

Though it’s meant for baking, I also enjoyed taking nibbles as I prepared the recipe (chocolate for tasting and baking, am I right?). The Dulcey blond chocolate is on the lighter side which makes it a great complement to the sweetness of the apples. We all like our apples dipped in something sweet (peanut butter, caramel, etc.), so why not drizzle it on top of your coffee cake?
